Fat Chick Fried Turkey Cutlets

This isn’t your holiday turkey. These cutlets are soaked in buttermilk, seasoned hard with Fat Chick, and fried until the outside is crackly and golden while the inside stays tender. It's like fried chicken’s underrated cousin finally getting the spotlight—and it’s bringing gravy to the party.

Ingredients

  • 4 turkey cutlets
  • 2 cups buttermilk
  • 1 tablespoon hot sauce
  • 2 tablespoons Fat Chick, divided
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 2 cups vegetable oil (for frying)

Instructions

  1. Whisk the buttermilk hot sauce, and 1 tablespoon of Fat Chick in a bowl.
  2. Drop the cutlets in buttermilk. Let ’em soak for at least 4 hours. They’ll thank you.
  3. Heat oil in a heavy skillet to 350°F.
  4. Mix flour, baking powder, and the remaining tablespoon of Fat Chick in a shallow bowl.
  5. Pull the cutlets out of the marinade and give them a good dredge.
  6. Fry for 5–6 minutes per side until they’re golden, crispy, and smelling like you made the right choice.
  7. Drain on paper towels and serve hot.
