Fat Chick Grilled Salmon

This salmon doesn’t need a crust, a glaze, or a side of apology. Just a slick of olive oil, a blast of Fat Chick, and a hot grill. It's smoky, flaky, and done in the time it takes your neighbor to overcook his chicken.

Servings: 4–6 (unless you’re feeding a pack of lifters or just love leftovers)
Prep Time: 5 minutes
Cook Time: 12 minutes

Ingredients

  • 4 small to medium salmon fillets (about 5–6 oz each)
  • 2 tablespoons olive oil
  • 2 tablespoons Fat Chick
  • 1 tablespoon lemon juice

Instructions

  1. Fire up the grill to 400°F.
  2. Rub down your salmon with olive oil and coat with Fat Chick. Be generous.
  3. Grill skin-side down for 5–6 minutes per side until it flakes easy.
  4. Finish with a drizzle of lemon juice for that one-two punch of fire and brightness.

Fat Man Tip

Use a cedar plank if you’ve got one—it makes it smoky without smelling like a campfire. To avoid a grill fire, don't forget to soak the plank!
