Fat Man's BBQ Chicken Pizza

Ingredients
- 1 large (12-inch) prepared pizza crust
- 3 chicken thighs
- 1 tablespoon olive oil
- 2 tablespoons Fat Chick
- ¾ cup BBQ sauce
- 1 ½ cups shredded cheddar or pepper jack
- ½ cup sliced red onion
- ¼ cup chopped fresh cilantro
Instructions
- Rub the thighs with olive oil and Fat Chick, then bake or grill at 375°F for 20–25 minutes until cooked.
- Let the thighs cool for 5 minutes.
- Shred the meat and toss with ¼ cup of the BBQ sauce.
- Slather the remaining ½ cup BBQ sauce onto the crust.
- Top with chicken, cheese, and onion.
- Bake at 450°F for 10–12 minutes until cheese bubbles.
