Fat Man's BBQ Chicken Pizza

We’re not reinventing pizza—we’re just making it way better. Fat Chick turns boring chicken into smoky, spicy topping gold. Add melty cheese, zingy onions, and a soft crust, and you’ve got a weeknight flex that tastes like a Friday night win.

Ingredients

  • 1 large (12-inch) prepared pizza crust
  • 3 chicken thighs
  • 1 tablespoon olive oil
  • 2 tablespoons Fat Chick
  • ¾ cup BBQ sauce
  • 1 ½ cups shredded cheddar or pepper jack
  • ½ cup sliced red onion
  • ¼ cup chopped fresh cilantro

Instructions

  1. Rub the thighs with olive oil and Fat Chick, then bake or grill at 375°F for 20–25 minutes until cooked.
  2. Let the thighs cool for 5 minutes.
  3. Shred the meat and toss with ¼ cup of the BBQ sauce.
  4. Slather the remaining ½ cup BBQ sauce onto the crust.
  5. Top with chicken, cheese, and onion.
  6. Bake at 450°F for 10–12 minutes until cheese bubbles.
  7. Finish with a rain of fresh cilantro.

Fat Man Tip

Add a drizzle of ranch or hot sauce if you’re feeling extra.
