Porker Roasted Sweet Potatoes

Porker Roasted Sweet Potatoes

These aren’t your grandma’s candied yams. These are roasted, caramelized cubes of flavor—savory, sweet, smoky, and just enough kick to make 'em addictive. They blur the line between a wholesome side and a guilty pleasure.

Servings: 4 as a side, 2 as a meal
Prep Time: 5-10 minutes (faster with a trick)
Cook Time: 25 minutes

Ingredients

  • 2 large sweet potatoes, cubed (about 1-inch pieces)
  • 2 tablespoons olive oil
  • 2 teaspoons Porker Rub
  • (Optional) 1 tablespoon maple syrup (for final drizzle)
  • (Optional) 1 teaspoon fresh thyme or rosemary (for a savory lift)
  • (Optional) Pinch of cayenne or smoked paprika (if you want more kick)

Instructions

  1. Preheat oven to 400°F.
  2. Cube the potatoes into even chunks. Toss with olive oil and Porker until coated. Add herbs if desired.
  3. Spread potatoes on a parchment-lined sheet pain in a single layer. Give those cubes room to breathe!
  4. Roast for 25 minutes, flipping halfway. Edges should caramelize, centers tender.
  5. Serve hot and let everyone pretend it was just a “healthy” choice.

✅ Fat Man Tips

  • Avoid the workout! Before cubing, poke sweet potatoes a few times with a fork and microwave for 4–5 minutes. This softens them up just enough to save your wrist without fully cooking them.
  • Want extra crispy edges? Crank oven to 425°F and use convection if you've got it.
  • Serving it with pork or chicken? Squeeze a little lime over the top to balance the sweetness and fat.
  • Batch for a crowd? Double the recipe, but use two sheet pans—overcrowding = soggy taters.
